Tasting notes: Dark chocolate-covered almond and dark cherry

A complex body that immediately reminds me of dark chocolate, which is later accompanied by notes of roasted almonds in the undertones. The top notes have a rich sweetness and brightness that remind me of dark cherry. The brightness can have a bit of a softer citric quality to it, but there weren’t any obvious citrus flavors.

Brews well in any method -- drip, French press, pour over, cold brew, and espresso. If you want one coffee that does everything well, this is it.

About the origin: Tarrazú is Costa Rica's most celebrated coffee region, and for good reason. Perched in the mountains south of San José at around 1,500 meters, the farms here sit where cool air, volcanic soil, and sharply defined wet and dry seasons slow the coffee cherry's development. This gives the coffee time to build the kind of density and sweetness the lower valleys can't match. This coffee comes through Coope Dota, a cooperative that transformed the Dota Valley by giving its farmers direct access to quality processing and a fair price for their work. This coffee is fully washed, which is a process that removes all the fruit of the coffee cherry immediately after it’s picked and lets the natural flavors of the coffee seed shine through.
